As of today, this is pretty much what I eat:
Here is my diet from one year ago. Peanuts have been replaced with walnuts due to the latter’s healthier lipid profile, beans with spaghetti due to the latter’s greater ease of cooking and milk with yougurt due to less galactose in the latter.
I am still a vegetarian (with the exception of a weekly or so side of salmon at lunch) and I am certain my diet remains in the top 20% most healthy in North America.
This diet may not be the best fit for everyone, and please conduct a registered dietician as to whether it is right for you.
